Croissant Donut (Cronut)

Ingredients A:

  • 1000gr High protein flour + 130 gr Sugar
  • 11gr Instant yeast + 6 gr Bread improver(S500)
  • 40gr Full cream powdered milk

Ingredients B:

  • 450 grcold water + 1 pc egg

Ingredients C:

  • 15 gr Salt + 100 gr FILMA margarine

Ingredient D:

  • 400gr FILMA Danish pastry margarine

Ingredient E:

  • 2Kg PALMVITA DEEP FRYING FAT

Cooking Instructions:

  • Mix all ingredients A and B evenly.
  • Add ingredients C then mix it until it’s almost non-sticky.
  • Wrap with the plastic and let it sit for 30 minutes.
  • Roll the dough into square shape, spread the Filma Danish pastry margarine and cover neatly.
  • Roll into square shape then make the single folding, wrap with plastic, let it sit for 15 minutes.
  • Roll again the squared dough, make the single folding, and let it sit for 15 minutes.
  • Roll the squared dough, make the single folding, and let it sit for 30 minutes.
  • Roll the dough into 5 mm thickness, and make the doughnut shape.
  • Put on the flour-smeared pan, let it sit for 45 minutes – 1 hour.
  • Heat up the PALMVITA DEEP FRYING FAT until it reaches 170OC temperature, then fry the Cronut until it gets the brownish yellow colour.
  • Remove from the pan and let it cool, dress with chocolate topping or any other toppings as you like.
