Ombre Cake

For 5 round pans (diameter 22 cm, height 2 cm)

 

Ingredients A :

20 pcs egg yolks (400 gr)

4 pcs egg whites (120 gr)

220 gr sugar

20 gr cake emulsifier

 

Ingredients B :

90 gr medium protein flour

30 gr milk powder

20 gr cornstarch

 

Ingredients C :

100 gr Filma  Margarine      melted together

80 gr Filma BOS  

 

Ingredients D :

Purple food colouring

 

Instructions:

  • Mix Ingredients A well until it thickens and gains volume. Add Ingredients B, then mix well.
  • Add Ingredients C and mix well.
  • Divide the batter into 5 parts @ 200 gr.
  • Pour 10 drops of purple food colouring into the first part of the batter, 12 drops into the second part, and 15 drops into the third part, 18 drops into the fourth part, and 20 drops into the fifth part.
  • Pour batter into round pans which have been covered by baking paper and a layer of margarine.
  • Bake in an oven at 200°C for 10 – 12 minutes.
  • After they’re baked and cool, layer each with buttercream and stack them into a cake.

 

Vanilla buttercream

 

Ingredients:

500 gr Filma Pusaka White Baker Fat

200 gr condensed milk

300 gr liquid fructose sugar

 

Ingredients:

Mix all ingredients well until it gains volume.
