Berry Green Tea Sweet Bread

Ingredients A:

  • 300 gr Bread flour/High protein flour
  • 60 gr Granulated sugar
  • 4 gr Instant yeast
  • 15 gr Powdered milk
  • 4 gr Salt
  • 2 pc Egg yolk
  • 70 gr Milk
  • ±80 gr Cold water

Ingredients B:

  • 30 gr FILMA® Margarine
  • 10 gr FILMA® BOS

Butter Cream:

  • 100 gr FILMA® Pusaka Shortening
  • 20 gr FILMA® Prestige Margarine
  • 50 gr Fructose (Liquid sugar)
  • 25 gr Sweetened condensed milk
  • (Whisk all ingredients until light and fluffy)

Topping:

  • Blueberry jam to taste
  • Green tea crumble to taste
  • Green tea glaze to taste

Directions:

  1. Knead Ingredients A until ¾ smooth, add Ingredients B, knead until elastic and smooth (Windowpane test)
  2. Roll the dough into a ball, rest for 15 minutes
  3. Weigh out 50 gr of the dough, roll each into a ball, set aside for 10-15 minutes (cover with plastic) until it expands
  4. Roll out the dough (letting out the air), roll into oval and place on a pan
  5. Proof the dough for 90 to 110 minutes
  6. Bake in a preheated oven at 180°C for 12 minutes
  7. Let it sit to cool down, then cut the middle part and fill with blueberry jam
  8. Spread the top surface with butter cream, sprinkle with green tea crumble and glaze with green tea
