Steamed Mocha Ganache Cake

Mocha Cake

Ingredients:

  • 250 gr Eggs
  • 210 gr Granulated Sugar
  • 12 gr Cake Emulsifier
  • 8 gr Mocha Paste
  • 3 gr Vanilla Paste
  • 170 gr Medium Protein Wheat Flour
  • 15 gr Milk Powder
  • 30 gr Cornstarch
  • 160 gr PALMBOOM® Cake Margarine
  • 60 gr PALMVITA® BOS

 

How to make:

  1. Heat up the steamer
  2. Melt PALMBOOM® Cake Margarine and PALMVITA® BOS
  3. Whisk eggs, sugar, cake emulsifier, mocha paste and vanilla paste until thick
  4. Add flour, milk powder and cornstarch, mix well
  5. Add PALMBOOM® Cake Margarine and PALMVITA® BOS, mix well
  6. Prepare 3 baking pans 10 x 26 cm, line with parchment paper
  7. Pour 300g of batter into each pan
  8. Steam mocha cake for 25 minutes over medium heat.

Chocolate Ganache

Ingredients:

  • 150 gr Dark Compound Chocolate (coarsely chopped)
  • 150 gr Whip Cream

 

How to make:

Mix the chocolate and cream, cook over medium heat while stirring until well combined.

Mocha Buttercream 

Ingredients:

  • 250 gr FILMA® Baker’s Cream Fat
  • 50 gr PALMVITA® BOS
  • 75 gr Sweetened Condensed Milk
  • 125 gr Liquid Sugar
  • Some Mocha Paste

 

How to make :

  1. Mix FILMA® Baker’s Cream Fat dan PALMVITA® BOS using a mixer until lightly fluffy.
  2. Gradually add condensed milk and liquid sugar while stirring until well combined.
  3. Add Mocha Paste and mix until evenly distributed.

 

Finishing :

  1. Arrange the cake, then add chocolate ganache as the filling.
  2. Arrange again with cake, add chocolate ganache, and cover with the last cake.
  3. Coat with buttercream and sprinkle chocolate flakes on the sides.
