Bomboloni Caramel

Ingredients A :

  • 400 g High Protein Flour
  • 100 g Medium Protein Flour
  • 75 g Granulated Sugar
  • 25 g Milk Powder
  • 9 g Instant Yeast
  • 8 g Salt

Ingredients B :

  • 2 Egg Yolks
  • 120g Liquid Milk
  • +- 110ml Cold Water

Ingredients C :

  • 50 g PALMVITA® Margarine 
  • 25 g PALMVITA® Butter Oil Substitute

Filling :

  • 500 g Strawberry Jam

Caramel :

  • 500 g Granulated Sugar
  • Enough water

1 kg PALMVITA® Deep Frying Fat for frying

Instructions :

  1. Mix ingredients A for 1-2 minutes until combined.
  2. Add ingredients B. Mix until the dough is ¾ smooth.
  3. Add ingredients C. Mix again until the dough is perfectly smooth.
  4. Rest the dough for 10 minutes, then portion the dough into 40g pieces.
  5. Roll the dough into balls, then let them rest for 10-15 minutes.
  6. Take one piece of dough, flatten it with a rolling pin to a thickness of about 1 cm. Place the dough on a tray that has been dusted with flour.
  7. Let the dough rise for 40-45 minutes.
  8. Fry using PALMVITA® Deep Frying Fat for a drier, aromatic, and crispier donut result. Drain on a cooling rack.
  9. Prepare the caramel, then coat one side of the donut with caramel. Once the caramel is set, fill the donut with strawberry jam.
