Ginger Dark Chocolate

Ingredients :

  • 50 g Cornstarch
  • 500 ml Milk
  • 1 thumb-sized piece of Ginger, grated and juiced
  • 2 Egg Yolks
  • 1 packet Agar-Agar Powder
  • 250 g Dark Cooking Chocolate
  • 50 g PALMVITA® White Fat

Instructions :

  1. Prepare oval-shaped molds. Wash and lightly rinse the inside with boiled water. Set aside.
  2. In a saucepan, mix cornstarch, milk, ginger juice, egg yolks, and agar-agar. Cook over low heat while stirring continuously until thickened. Remove from heat.
  3. Pour the mixture into the molds. Let it cool and set. Once firm, unmold and place the cakes on a wire rack.
  4. Melt the dark chocolate together with margarine using a double boiler. Dip the cakes into the melted chocolate. Let them harden.
  5. Decorate the tops with chocolate leaves or chocolate decorations. Chill and serve.
