Donut Burger

Donut Ingredients:

  • 250 g High Protein Flour
  • 250 g Medium Protein Flour
  • 90 g Granulated Sugar
  • 12 g Instant Yeast
  • 2 g Bread/Donut Dough Softener
  • 2 g Baking Powder
  • 12 g Milk Powder
  • 2 Egg Yolks (30 g)
  • 200 g Cold Water
  • 35 g FILMA® Prestige (Butter Blend Margarine)
  • 6 g Salt

For frying : FILMA® Goodfry Deep Frying Fat

Topping:

  • Sesame Seeds and Egg White

How to Make:

  1. Mix all dry ingredients except salt, then add water and egg yolks. Knead at low speed for 3 minutes.
  2. Add margarine and salt, knead until the dough is smooth and elastic.
  3. Divide the dough into 50 g portions, shape into balls, then flatten and make a wide hole in the center.
  4. Brush the surface with egg white and roll over sesame seeds.
  5. Cover with plastic and let rise until 2 ½ times its original size.
  6. Fry in preheated oil over medium heat until golden brown and cooked through.

Yield: 19–20 pieces

Patty Ingredients:

  • 500 g Ground Meat (this recipe uses chicken)
  • 4 cloves Garlic, mashed
  • 1 Onion, finely chopped
  • ½ tsp Ground Pepper
  • 1 tsp Salt
  • 2 tsp Chicken Stock Powder
  • 2 tsp Sugar
  • 75 g Panko Bread Crumbs
  • 50 g Cornstarch
  • 1 Egg

How to Make:

  1. Mix all ingredients until well combined. Weigh each patty at about 70–75 g.
  2. Flatten, then refrigerate for 1 hour.
  3. Cook in a pan over medium heat until fully cooked.
  4. Filling Ingredients: Lettuce leaves, Tomato slices, Onion (lightly sautéed), Cheese slices, Mayonnaise, Chili sauce or tomato sauce
  5. Assembly: Slice the donut in half. Layer with lettuce, tomato, and onion. Add the meat patty, cheese slice, sauces, and mayonnaise.
